Blueberry Crumb Coffee Cake
Some of the fondest memories I have of my grandmother involve cooking and eating. When my grandmother passed away I went through all her recipes and started collecting them into a cookbook. This alone was quite an adventure and an undertaking; considering they were all handwritten, covered with splashes and spills, and yellowed from age. The recipe I'm sharing with you today is one of my favorites.
The first thing I like to do when I'm baking is to assemble all my ingredients. We had the opportunity to go to Three Birds Berry Farm, a local farm, and pick fresh blueberries about two weeks ago. Since we picked a gallon of blueberries - I froze some and we ate a whole bunch already. So today I'm using a combination of fresh and frozen blueberries.
Ok, let's start baking. I bake using a KitchenAid Stand Mixer, but you could totally make this using a hand mixer. First things first, go ahead and grease a 13x11 or 13x9 pan. My grandmother's recipe called for a 13x11 roaster pan, but I just use my 13x9 pyrex pan.
Now for the fun part! First cream together the margarine (or butter) with the brown sugar until is was well combined.
Once I had my margarine and brown sugar mixed together, I added the eggs, flour, baking powder, and salt.
Now it's time to add the milk and the vanilla. The recipe from my grandmother didn't have an exact amount so I just used 1 tsp.
Now that you're all mixed up go ahead and pour the batter into your pre-greased pan.
Top it with those yummy blueberries! I was happy to get these on here before my little ones ate them all! Make sure when you pour them on top that little hands know not to pull them out of the batter containing raw eggs.
Go ahead and set that aside because it's time to make the crumbs! For this I just threw all the ingredients in my freshly washed out mixer bowl and combined them until they looked kind of like sand.
Next, sprinkle those crumbs on top of the blueberry layer. It makes quite a bit of crumbs, so feel free to spread them all around.
Bake at 385 for 45 minutes and enjoy the amazing smells wafting from your oven.
Looks amazing right? Ok when it's all cool go ahead and sprinkle that bad boy with some powdered sugar and you are done!
